From the HM Terry Company, these are from the Eastern Shore of Virginia, seaside (Hog Island Bay). They have an initial briny burst with a sweet, delicate finish. Great on the half shell or for grilling. Size: about 3 to 3 1/2 inches.
Tangier Island is located in the center of the Chesapeake Bay. This top-water oyster is lovely and compact. The meats are stout and tender, mildly salty, with a clean elememtal finish. Size: about 3 inches.
From Pangea Shellfish Company. Standish Shores are raised in Duxbury Bay, Massachusetts. These have a full brine with a butter and crisp finish. Size: about 3 to 3 1/2 inches. These are very FANCY oysters, better than Bluepoints. They have a mature shell (hard) so they are easy to open.
